Father's Day Frozen Chocolate Pie

For those of you who know my dad, you know how awesome he is. My dad is always willing to go out of his way to help someone, so on Father’s Day we wanted him to feel really special! Last week, in honor of Father’s Day, we dedicated MIHM to my dad. One of his favorite desserts is chocolate mousse pie, so we found a new take on a classic pie. This frozen chocolate pie recipe combines pudding mix and chocolate ice cream for a cool treat!

Frozen Chocolate Pie

Ingredients

Crust:
1 cup graham cracker crumbs
3 tablespoons powdered sugar
¼ cup melted butter

Filling:
1 pint (2 cups) vanilla ice cream
1 ¼ cups milk
2 packages (4 serving size) instant chocolate pudding
whipped cream, chocolate curls

Directions:

Combine crust ingredients; press into pie plate and chill for 15 to 20 minutes, while making filling.

Combine ice cream and milk; beat until well blended, then add pudding mix. Beat just long enough to combine thoroughly. Pour filling into chilled crust. Refrigerate until firm. Before serving spread a layer of whipped cream over the top and garnish with chocolate curls.

My mom worked on the crust while I made the filling. After everything was set, we combined the crust, filling and whipped cream per the recipe. The only thing we changed was the garnish. Instead of using chocolate curls, we used hot fudge sauce. MMMM, such a good call on our part!! We also made our whipped cream from scratch which is giving cheese a run for its money as my favorite food.

The pie was delicious. It had the light consistency of a traditional chocolate mousse pie, but because we used ice cream, it had a cold, refreshing aspect to it. Perfect for a summer day! The pie was really decadent and we were all pretty full after one slice. My dad enjoyed the pie, the Girls Team had fun making it, and most importantly, we all spent Father’s Day together reminding my dad how cool he is!
